The Naked Cake

Written by Larissa Voln

ganached cake

Many are wondering what is inside of those cakes, right under the fondant sugar coat. Well, here is the naked one.

Covered with rich chocolate ganache, waiting to wear some pink fondant and to be later crowned with a huge peony flower.

Here are some more pictures of this cake and the other one I was preparing at the same time.

I know you probably won't give away your recipe, but could you recommend a chocolate ganache recipe for use in filling and coating a cake like the one you've done here? My ganache is usually very liquid-y, and the one hear looks almost like buttercream.

The cakes on these pictures are covered with ganache. You can apply the same method to buttercream of course. I use turntable and a bench scraper to do the sides and then trim the crown with hot spatula.
